Mamak-Style Mee Goreng at Home — The Kicap Makes the Difference

Updated 25 October 2026 · OmniCart Malaysia

A good plate of mee goreng is not about the noodles — it is about the kicap that glazes them. Get that one step right and your home mee goreng tastes like the mamak down the road. Here is how.

What makes mee goreng mamak different

It is not the noodles — it is the glaze. The cook finishes the dish over roaring heat with a dark, sweet-savoury kicap that caramelises on the noodles and clings to every strand. Get that one step right and a plate of plain yellow noodles becomes the real thing.

The ingredient most people get wrong

Plain light soy sauce will not do it — too salty, too thin to glaze. You want a thicker, slightly sweet cooking kicap made for noodles. Kak Zaidah Kicap Mee is exactly that: an all-purpose cooking soy sauce built for mee goreng, kuey teow and nasi goreng. One bottle does the lot.

Easy mee goreng (serves 2)

  1. Blanch yellow noodles, drain, and toss with a little oil so they do not clump.
  2. Fry garlic and chilli paste in hot oil. Add your protein — a handful of fresh chicken or prawns — and cook through.
  3. Push to one side, crack in an egg, scramble, then add the noodles.
  4. Pour in 2–3 tablespoons of kicap mee, add beansprouts and greens, and toss over high heat until the noodles are glazed and a little smoky.
  5. Finish with fried shallots, a squeeze of lime and sliced chilli.

Make it yours

Swap in seafood for mee goreng basah, keep it vegetarian with just egg and greens, or go mamak-sweet with an extra splash of kicap. The same bottle carries your kuey teow goreng and nasi goreng too.
